Parmesan Meatloaf

Watching your carbs these days?  Here is a delicious and easy version of meatloaf that reduces the carbs and pumps up the flavor!  The hardest part will be resisting the urge for seconds.

• 2lbs. ground beef

• ½ cup Parmesan cheese
• ¼ cup Dijon mustard
• ½ cup ketchup (I used reduced sugar)
• 2 Tbs. marjoram
• 1 Tbs. each, dried basil, dried parsley, oregano, & thyme
• 1 tsp. salt
• 2 tsp. pepper
• ½ cup mozzarella cheese
• 4 cloves garlic, chopped
• ¼ cup green bell pepper
• 1 sm. Onion, finely chopped
• ½ cup spaghetti sauce
• 1 Tbs. olive oil
• 1 large egg, beaten

Combine beef, egg, seasonings, and dressings in large bowl.  Transfer mixture to sprayed loaf pan.  Top with pasta sauce & mozzarella cheese.  Bake in preheated 375-degree oven for 1 hour or until done.  Let sit for 5-10 minutes before serving.
