Bacon Wrapped, Cream Cheese
Stuffed Chicken Breast

Watching your carbs?  Here is a delicious recipe for an individual serving that you won’t want to pass up.  It’s not exactly low fat, but definitely low carb.  Feeding a family?  Just multiply the ingredients by the number of people you are serving.

Bacon Wrapped, Cream Cheese 

Stuffed Chicken Breast

• 1 boneless skinless chicken breast
• 2 Tbs. cream cheese (I used Neufchatel)
• 1 Tbs. chopped green onion
• 2 pieces bacon, partially cooked.
• Garlic salt to taste

Preheat oven to 375.

Pound chicken breast until ¼” thick.

Sprinkle with garlic salt.

Mix together cream cheese & green onions.  Spread over one side of chicken breast.

Roll chicken breast up to seal.

Wrap partially cooked bacon around chicken and secure with toothpicks.

Place on baking sheet & bake 30 minutes or until done.

Broil for about 5 minutes to crisp.

Makes 1 serving.

To vary this up, sprinkle pesto seasoning on the chicken before spreading the cream cheese and layer roasted red bell pepper on top before rolling up.  If carbs are not an issue, glaze the rolled up chicken breast with Blackberry Chipotle sauce before broiling.  I see endless possibilities with this one.  Enjoy!
