Summertime brings visions of palm trees, breezes, and exotic tropical beverages. The smell of coconut scented sun tan oil often tantalizes the taste buds for anything coconut. Here are a couple of recipes that are guaranteed to put you in coconut heaven!

Mounds Cake

This is one of the BEST cakes I have tasted. If you’re looking for an easy crowd-pleaser this is definitely worth making as it won’t be around long.

• 1 Devil’s Food Cake Mix & required ingredients
• 2 cups sugar, divided
• 24 large marshmallows
• 1 ½ cups milk, divided
• 14 oz. pkg. coconut
• 1 stick butter
• 1 ½ cups chocolate chips

Preheat oven to 350.

Mix and bake cake according to directions in a 13 X 9” pan.

Combine 1 cup of sugar, marshmallows and 1 cup of milk in a med. saucepan. Cook over low heat until marshmallows are melted. Stir in coconut and spread on top of warm cake.

Mix butter, 1 cup of sugar, and ½ cup of milk in a small saucepan. Bring to a boil. Stir in chocolate chips and spread over coconut mixture.

Coconut Cream Martini

• 1 oz. coconut rum
• 2 oz. half & half
• ¼ tsp. vanilla
• Honey or sweetened
condensed milk
• Coconut flakes

Add rum, half & half, and vanilla to a shaker full of ice. Shake until cold.

Dip rim of martini glass in honey or sweetened condensed milk, then dip in flaked coconut. Pour shaken liquid into glass. Enjoy!
